TIRAMISU CUPCAKES

As you all know, this Sunday is Fathers Day.
Our dad, like many others I'm sure, is in love with chocolate. But we've really exhausted the chocolate cake ideas with every other birthday/Fathers Day. After throwing a few suggestions around we remembered that one of his faves desserts is Tiramisu. And when we say favourite, we kind of mean OBSESSED, if there is one on the menu in the restaurant he just cannot resist.
These cupcakes taste just like Tiramisu and they are divine ~ if you like Tiramisu!
The creamy mascarpone and Kahlua top is so so tasty (and my work friends definitely agreed)! And it is a marriage made in heaven alongside the coffee and chocolate cake.
So, it's time to get your bake on, and make some delicious Tiramisu cupcakes to show your dad how much you love him...
Ingredients:

For the cake...

4 oz butter
2 oz caster sugar
2oz brown sugar
2 eggs
3 1/2 oz self-raising flour
1/2 oz cocoa powder
1 tsp vanilla extract
1 tsp ground coffee (instant coffee)
2 tsp water
1 tsp baking powder
For the syrup...
50ml boiling water
3 tbsp caster sugar
1 tbsp Kahlua (or other coffee liqueur or brandy-like alcohol)
1 tsp ground coffee
For the Frosting...
170g mascarpone
180ml double cream
80g icing sugar
2 tbsp Kahlua
Preheat your oven to 200°C/180°C Fan/Gas mark 6 and line a cupcake tray with 10-12 cupcake cases.
Start by beating together your butter and both sugars until light and fluffy. Then, beat in the eggs, vanilla, baking powder, water and ground coffee, until well combined. Lastly, mix in the flour and cocoa powder until you have a smooth, combined mixture.
Fill your cupcake cases with the mixture. You want these to be about 2/3 full so you may make more or less than 10 depending on the size. Place these in the centre of your pre-heated oven and bake for 15 minutes.
Before the cupcakes are ready to come out of the oven you want to make the syrup so you are ready and armed to soak them while still warm.
To do this just measure out all of your ingredients into a cup and give them a good stir. Making sure all of the coffee granules and sugar have dissolved.
Once your cupcakes are baked, take them out of the cupcake tin and onto a cooling rack. While the cupcakes are still warm, take a cocktail stick and poke a few holes in the top.
Then brush with the coffee syrup, allowing it to soak in. Use all of syrup evenly between the 10 cupcakes. Then leave to cool completely.
To make the frosting whisk together the mascarpone, icing sugar and Kahlua.
In a separate bowl, whisk the double cream until stiff peaks are formed. And then carefully fold the whipped cream into the mascarpone in two additions until fully combined.
Use the frosting straight away to decorate the cupcakes. We piped ours on but you can pipe or spread whichever you prefer. Dust with cocoa powder and grated chocolate. Keep the cupcakes chilled until ready to serve.
We know we always say this but these are one of the most delicious and flavoursome cupcakes we've made. They are definitely one of the best like for like flavours we have done, they taste just like Tiramisu just in cake form!
The frosting is absolutely divine!
