COCKTAIL CUPCAKES | PORNSTAR MARTINI

Here is the third in our series of cocktail cupcakes; Pornstar Martini cupcakes!
The Pornstar Martini is a new favourite of ours, we just love the passion fruit flavour (and the champagne).The ingredients of the Martini in our favourite place to drink them are; vanilla vodka shaken with Passoa, fresh passion fruit, lemon juice and sugar. Served with a shot of champagne.
We are in love with the zingy passion fruit flavour and who doesn’t love a shot of champagne as a side to your drink!


We have made a prosecco and lemon cupcake, topped with prosecco and vanilla buttercream swirled with passion fruit and Passoa buttercream and decorated with sugar shards. The passion fruit and Passoa buttercream gives the whole cupcake a delicious passion fruit flavour which is absolutely perfect for replicating the Pornstar Martini flavour!
Here is how we made them...


Ingredients;
For the cupcakes…
6oz butter
6oz caster sugar
3 eggs
1tsp vanilla essence
6oz self-raising flour
1tsp baking powder
zest and juice of 1 lemon 
5 tbsp prosecco

For the buttercream…
Passion fruit buttercream;
2oz butter
10oz icing sugar
3tbsp Passoa
3tbsp passion fruit juice
orange food colouring 
Prosecco buttercream;
2oz butter
10oz icing sugar
3tsp vanilla essence
2tbsp prosecco

For the sugar shards…
100g caster sugar
30ml water

Preheat your oven to 200°C/180°C Fan/Gas mark 6 and fill your cupcake tray with 14 cupcake cases.


Beat together the butter and sugar, then add in the eggs, vanilla and baking powder and combine. Next, fold in the self-raising flour until you have a smooth batter. Finally, stir in the prosecco, lemon zest and lemon juice.


Now, take the batter and fill your cupcake cases, we managed to get 14 out of ours but you will get a different amount depending on the size of your cases! Place in the oven and bake for 20 minutes or until golden brown and an inserted skewer comes out clean.
While the cupcakes are still warm, take a cocktail stick and pierce the cakes around 5 times and then brush generously with prosecco.


To decorate the cupcakes we used little shards of toffee. Place 100g of caster sugar and 30ml of water into a pan on a low heat and stir until the sugar has dissolved. Turn up the heat and leave to bubble until it turns a light golden colour. Take the toffee off the heat and pour into a lined tin. Put it into the fridge and leave to harden. Once hard, crack the toffee into little shards of various sizes. 


To decorate, we made two different buttercreams and swirled them together on the cake. We used a special piping bag which was split down the middle and put this inside of our usual piping bag with a star nozzle on the end. To get the same effect you could just put two piping bags inside of another which has the nozzle attached. 
For the passion fruit buttercream, beat together the butter and the icing sugar, then stir in the Passoa, passion fruit juice, and orange food colouring. Beat in more icing sugar if you find the buttercream too runny.


For the prosecco buttercream, beat together the butter and the icing sugar, then stir in the prosecco and vanilla. Again, make sure the buttercream is not to runny by adding icing sugar if needed.


Put the two buttercreams into their individual bags and then put those bags into the main one. Pipe the buttercream onto the cakes, starting from the outside and swirling in towards the centre. 


Decorate your cakes with the shards however you would like and then you are done. Time to enjoy your cupcakes with a delicious glass of Pornstar Martini!


These cupcakes were another success for our cocktail cupcakes series! They were a hit with our family, especially Mum who loves passion fruit and is obsessed with Pornstar Martinis! The orange buttercream was really sweet and fruity, you can really taste the passion fruit in there, which goes amazingly with the white vanilla and prosecco buttercream. 


We found that the prosecco makes the sponge super light and fluffy but the taste doesn't come through as much after baking. The cake is still a really nice flavour with the vanilla and lemon coming through and we will be making them again for definite!
