2 REFRESHING SUMMER GIN COCKTAILS

As you may or may not know:
Today is WORLD GIN DAY!
Otherwise known as the third best day of the year after Christmas and your birthday, and a global celebration of all things gin!
So to the gin lovers of the world ~ Happy Gin Day to you!
We have two delicious light and refreshing, fruity cocktails for you to try. They are both extremely tasty and will be gorgeous drinks for the summer. Even if you are not a gin lover you could easily swap in another spirit such as vodka or white rum. They only take a few minutes to stir up so what are you waiting for?!
Raspberry and Peach Gin and Lemonade
We have aways been lovers of fruity cocktails so this raspberry and peach lemonade is a dreamy summer cocktail for us. It is sweet, fruity and fresh and a perfect drink for a sunny summers day.
Ingredients:
(makes 4)
4 shots Gin
3 cups cold water
Juice of 2 lemons
Ice
Raspberries and peach slices for garnish
Raspberry Peach Purée...
2 ripe peaches, diced
(if you can't find fresh or ripe then tinned is better than nothing)
1 cup raspberries
1 cup water
2 tsp sugar
To start making this delicious cocktail, you will need to make a raspberry peach purée. To do this, add your peaches, raspberries, water and sugar to a food processor and blend until puréed. Sieve the puree into a bowl, using a spoon to push all of the liquid through, and discard of the seeds and skins left in the sieve.
This is best made in a large jug and then poured into glasses, but you could make in the glass separately if you want.
In a large jug, add 3 cups of cold water, lemon juice, your raspberry peach purée and ice cubes and stir to combine. Then add in your 4 shots of Gin, stir again before putting into the fridge until ready to serve.
Pour the cocktail into glasses over ice and serve with raspberries and slices of peach to garnish.
Blackberry Bramble
Brambles are another super summery, refreshing and sparkling cocktail and I'm sure anyone who likes gin will love these delicious drinks. A classic drink made of gin, lemon juice, blackberries and soda water. You could also add a blackberry liqueur or a dash of the black raspberry liqueur Chambord for an even better taste.
Brambles hold a lot of memories for me (Imogen), and I'm sure some of you will know why. They are basically the cocktail that reminds me of some of the best years of my life with the best people at University.
Ingredients:
(makes 3 to 4)
1 punnet of blackberries
4 shots Gin
2 tsp sugar
Juice of 1 lemon
Soda Water
Blackberry liqueur/Chambord (optional)
In a jug (or cocktail shaker if you have on), muddle your blackberries with gin, lemon juice and sugar. Keep muddling until all of the blackberries are broken up and have released of of their tasty juice.
Fill 4 short glasses with lots of ice, (crushed is best if you have it), and pour the blackberry gin mix over the ice using a sieve to remove the seeds. Top with soda water and garnish with blackberries and lemon zest.
