BAKED MONSTER DOUGHNUTS

And welcome back to Sharkett Sisters! We haven't posted for a few weeks while spending a lovely relaxing time on holiday, BUT we have been active and posting on Instagram so make sure to check our feed out if you're not up to date (Sharkett Sisters).
For our halloween bake this year we have made these increeeedibly cute and delicious baked doughnuts. Because who doesn't love a doughnut?! We're literally watching doughnuts being baked on the Great British Bake off as we speak, so it's definitely a national favourite. We love how exciting these doughnuts look and they taste just as good as they look. They are frighteningly easy and so much fun to make. We only wish we had made more because it was so much fun decorating these little beasts! We used 3 colours and had a few different piping nozzles but you can use as many nozzles, colours or sprinkles as you want - just have fun!
We're new to baked doughnuts so we just kept them simple and vanilla but they are still divine. These doughnuts are much more cakey than the fried doughnuts that we're used to but they are still perfect nevertheless.
Baked doughnuts - aka cake doughnuts - are baked in an oven rather than being fried in hot oil so they do require a doughnut tray. You can use silicone or tin trays, we got ours from Amazon (here).
Ingredients:
For the Doughnuts...
180g plain flour
2 tsp baking powder
110g caster sugar
1 large egg
100g butter, cooled
120g buttermilk
1 tsp vanilla extract
large pinch of salt
For the Decoration;
5oz butter
10oz icing sugar
white royal icing (or icing eyes if you can find some)
food colourings - including black for eyes
sprinkles
Something EVERY monster needs is eyes, and we definitely saw some pre-made eyes in a supermarket somewhere so if you're lucky and find those you might be able to miss this step.
If you're making the eyes, then making them first gives them a little time to harden before using. Roll tiny balls of white icing and press them down with your finger to make a thick circle. Dot a circle of black food colouring onto each eye using a cocktail stick to make the pupil and then set aside until later.
Preheat the oven to 180ºC/160ºC Fan, and grease the doughnut tray with spray oil or melted butter.
Place the flour, baking powder, caster sugar and salt into a large bowl and stir together. Then add the egg, butter, buttermilk and vanilla extract and mix well with a wooden spoon until you have a smooth, thick mixture.
Spoon the mixture into a piping bag and cut a hole in the end of the piping bag leaving a gap around 1 cm wide. Then pipe the mixture into the doughnut tray, filling each mould around 1/2 full. Pop them into the pre-heated oven and bake for around 10-15 minutes or until golden brown.
Turn them out onto a wire rack and set aside to cool while you make the buttercream.
To make the buttercream start by beating the butter until soft. Then, beat in the icing sugar a bit at a time. You may need more icing sugar than stated - it really depends on the butter you use - so keep adding a tablespoon at a time until you have the right consistency. It needs to be thick enough to keep its shape but not too thick that it's too hard to pipe.
Seperate the buttercream into bowls - one for each colour - then mix well until evenly coloured.
Now time to get creative using your different piping nozzles and coloured buttercream. Finish the monsters off with eyes and sprinkles. Remember, not all monsters only have two eyes!
We are so happy with our little monster friends, they are almost too cute to eat!
