VEGETABLE LASAGNE

Vegetable lasagne is actually something that we make quite a lot. We are big lovers of lasagne both meat and veg, but sometimes it's nice to get a big pile of veg into your body, and a veg lasagne is a delicious way to do it!


This is a super easy recipe, and you can put as many different vegetables in it as you want. Today we have put in onion, courgette, red pepper and carrot but we often put in other veg like swede or cherry tomatoes. Aubergine is used a lot in veg lasagnes too but we actually really don't like it, but if you do then feel free to throw some in!



Ingredients:
1 courgette
a few carrots
1 red pepper
1 onion
1 tin of chopped tomatoes
salt and pepper
garlic (clove or puree)
lasagne sheets
1/2 jar of white lasagne sauce
grated cheese

Preheat your oven to 200°C/180°C Fan/Gas mark 6.

To make the tomato sauce, start by heating some oil in a pan and adding your onion and garlic. Leave to fry for a few minutes then add in the other vegetables and leave for another few minutes to soften slightly.


Add the chopped tomatoes, salt and pepper. Bring to the boil then reduce to a simmer for about 10/15 minutes until slightly reduced and thickened.



Add some of the tomato sauce to the bottom of a dish. You just need enough to cover the bottom. Add a layer of lasagne sheets, and repeat until you have used all the sauce. If you want you can put white sauce between the layers but since this is supposed to be a healthier choice we decided not to. 



When you have used all your tomato sauce, add a final layer of lasagne sheets and cover this with about half a jar of white lasagne sauce. Then grate some cheddar cheese, sprinkle it on top and it's ready to go in the oven. Bake the lasagne for about 45 minutes until the cheese is all melted and bubbling deliciously!


Vegetable lasagne is one of our favourite meals when we're trying to be healthier, its such a delicious way to eat lots of vegetables whilst still feeling a little bit naughty with the cheese on top! You can, of course, make it even healthier with a low fat white sauce and low fat cheese.


You can serve the lasagne on its own or it's really tasty with some home made wedges and salad! If you don't eat it all in one go you can just pop in in the freezer and heat it up another time, which we find super useful!
