WHITE CHOCOLATE ROCKY ROAD

With a few of these rainy days being thrown into the weather mix recently, what better way is there to spend your time inside other than baking?! The answer is nothing!
Even if you're not much of a baker, we've got the recipe for all rainy days right here. Rocky Road is less baking and more 'melting some ingredients and mixing it together with biscuit and marshmallow', so there's no way you could possibly go wrong AND it's just sooooo delicious!


Taking the average rocky road and swapping in white chocolate makes these simple but gorgeous white chocolate rocky roads. We think these look super pretty and they taste incredibly delish especially with the jelly sweets inside - they are a must have. Rocky Roads are always a winner with the chewy marshmallow and crunchy biscuit so grab yourself a mixing bowl and let's get going...


Ingredients:
150g unsalted butter
400g white chocolate, chopped
4 tbsp golden syrup
100g mini marshmallow
200g digestive biscuits, crushed into chunks
2 tubes of Smarties
handful of dried cranberries
red/pink sweets of your choice including some jelly sweets
freeze dried raspberry topping
50g dark chocolate, chopped


Start by placing a mixing bowl over a pan of boiling water on a medium heat, making sure the bowl does not touch the water. Place the butter in the bowl to melt, and when it's about half melted, add in the white chocolate and golden syrup. Continue to stir over a very low heat - keep stirring even if it becomes to look a little weird - until it's thick, smooth and well combined. Remove the bowl from the heat and set aside for around 10 minutes until it has cooled slightly.


Add your digestive biscuits, marshmallows, smarties, dried cranberries and chosen jelly sweets and stir until everything is well mixed and fully coated. Remember to leave some sweets to decorate.


Line a baking tin with greaseproof paper, and then press your mixture firmly into the tin. Decorate the top with the sweets, smarties, freeze dried raspberries and dried cranberries, and press them down slightly to make sure that they will stick. Put into the fridge to set for at least a couple of hours.


Once cooled, melt the dark chocolate and drizzle over the top before cutting into pieces with a sharp knife. You can cut them into whatever size and shape you would like, but we chose to cut it into 7 strips and them by 3. This way you get 21 delicious strips which are the perfect size.



Perfect for sharing with friends or eating alone, either way you've got to face it that you're probably not going to be eating just one - they are just so divine and definitely more-ish!
