Easter eggs and chocolates launched into shops months ago, but we have quite successfully restrained eating it all until now (ok, yes, there were a few cheeky Creme Eggs eaten in Feb)! Now that is Easter is only around the corner, it's time to INDULGE; Mini eggs, Creme Eggs, Easter Eggs, Malteser Bunnies the LOT because it won't be long until they're taken off our shelves and out off the shops for another year!
One Easter treat that we have been super set on making this year is a Creme Egg Easter Rocky Road. Rocky Roads are all so delicious with their chewy but crunchy texture, but throw in some Mini Eggs and Creme Eggs and you are onto a winner! One of the best things about Rocky Roads is that you can really make them your own. You can add in anything you want and it will taste divine: chocolates, sweets, raisins, cherries, you name it, it works!
These are so so quick and easy to make, there is literally no way it could go wrong. So keep scrolling and get your aprons out, because it's your turn to make this Easter Rocky Road...
Ingredients:
150g unsalted butter
250g dark chocolate, chopped
150g milk chocolate, chopped
4 tbsp golden syrup
2 bags of mini Creme Eggs, unwrapped
1 bag of Mini Eggs
100g mini marshmallow
200g digestive biscuits, crushed into chunks
50g white chocolate, chopped
Add your digestive biscuits, marshmallows, Mini Eggs and Creme Eggs (making sure to leave some Mini Eggs and Creme Eggs for decoration) and stir until everything is well coated. We kept the Creme Eggs whole inside the rocky road and halved them for the decoration.
Line a square baking tin with greaseproof paper, and then press your mixture firmly into the tin. Decorate the top with your extra Mini Eggs and Creme Eggs making sure to press them down slightly so that they will stick. Put into the fridge to cool for at least a couple of hours.
Once it has been chilling for a few hours, take it out of the tin and peel the greaseproof paper away from the sides. Melt your white chocolate either in a bowl over a pan or in the microwave and then drizzle over the top of your rocky road using a spoon.
Lastly, cut the rocky road into chunks using a sharp knife, and enjoy! These Creme Egg Rocky Roads are perfect for sharing, but we will definitely understand if you don't want share, we don't blame you!
Not only do these rocky roads look really pretty and super Easter-y (yep, new word), but they taste absolutely amazing. The combination of creamy chocolate mixture with crunchy biscuits, and delicious Easter chocolates is just divine!
