Making cupcakes was a lovely way to spend our bank holiday Monday afternoon.

We have been wanting to try out this flavour combination for a while, and just decided well... today is the day! Today, is a blackberry and lime kinda day!
So this is how to make our lime cupcakes swirled with homemade blackberry sauce, decorated with zingy lime buttercream and drizzled with more blackberry sauce...
Ingredients:
(makes 9)
For the blackberry sauce...
200g blackberries
50g caster sugar
1 tbsp water
For the cupcake...
4oz butter
4oz caster sugar
2 eggs
4oz self-raising flour
1 tsp baking powder
zest and juice of 1 lime
For the buttercream...
4oz butter
16oz icing sugar
zest and juice of 1 lime
Extra limes and blackberries to decorate.
First, you will need to make the blackberry sauce. This is super quick and easy but if you would rather buy a ready-made blackberry jam/coulis/sauce then we won't judge!
Place your blackberries, sugar and a tablespoon of water into a pan a place on a medium heat. You want to keep this on a simmer so adjust your heat accordingly once it begins to bubble. Leave to simmer for 15 minutes. Turn off the heat and transfer to a bowl to cool.
Now, to make cupcakes!
Preheat your oven to 200°C/180°C Fan/Gas mark 6 and line a cupcake tray with 9 cupcake cases.
To make the cupcakes, beat together the butter and caster sugar until light and fluffy. Then beat in the eggs. Add in the flour, baking powder, and zest and juice of 1 lime and mix until combined into a smooth batter.
Spoon the mixture into the cupcake cases and then swirl in a little spoonful of the blackberry sauce. It doesn't matter if your sauce is still a little warm, as the cakes are about to go into a hot oven anyway!
Bake in your pre-heated oven for 18 minutes or until golden brown and an inserted skewer comes out clean. Set aside on a wire rack to cool.
Beat together the butter, and the zest and juice of 1 lime. Then, beat in your icing sugar a bit at a time. If you find that you get to the right consistency before you've added all the icing sugar, then great, but if you find it too thin, then add more icing sugar until it feels right.
Once the cakes are completely cool, swirl the buttercream on top using a piping bag and nozzle. Finish the cupcakes off with a drizzle of your yummy blackberry sauce and slices of lime and a few blackberries ~ mini pinwheels are optional!
These cupcakes are so, so delicious! The lime makes super tasty cupcakes and THE most incredible, zesty buttercream! It's easy to just buy a blackberry sauce but honestly it's just as easy to make it. And it's very rewarding to know that you made something that tastes so divine! The whole combination is just a zestful piece of heaven in a cake!
