Happy weekend everybody!
As we're sure you know, the much anticipated and one of the best days of the year is almost upon us...
ITS PANCAKE DAY ON TUESDAY!
or Shrove Tuesday, whatever you would like to call it. Usually, for us, pancake day is more about the crêpe style pancakes but have been LOVE these American style pancakes for breakfast so wanted to share these with you. Pancake day should about be about having as many pancakes as possible, right? so you may as well mix it up a bit!
We used the Jamie Oliver recipe for American Pancakes. We have heard so many great things about these pancakes and they certainly did not disappoint! They are absolutely divine! They're super fluffy and delicious with any topping, and definitely perfect for breakfast or brunch. They are really quick and easy to make too, so keep scrolling to see how to make them...
Ingredients:
3 large eggs
115g plain flour
1 heaped teaspoon baking powder
140ml milk
First separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to form a smooth, thick batter.
Whisk the whites with 1 pinch of sea salt until they form stiff peaks.
Now, carefully fold the egg whites into the batter, and it's that simple, now you're ready to get frying! Heat a non-stick pan over a medium heat, and pour some of the batter into the pan and cook for a couple of minutes, or until it starts to look golden and firm. At this point, sprinkle your chosen flavouring onto the uncooked side before loosening with a spatula and flipping the pancake over. We chose to make some with blueberries inside, some with chocolate chips (not that successful) and some just plain. Continue frying until both sides are golden.
You can make these pancakes as big or as small a you like. Best served with a drizzle of maple syrup and then basically any combination of delicious things you can think of. We would definitely recommend trying some of our combinations below, but there is literally no limit! We will continue to create divine combinations and keep you updated with the best.
Strawberries and Nutella with a drizzle of maple syrup makes for a classic strawberries and choc combination.
For a fruity breakfast, top your blueberry pancakes with strawberries, bananas, extra blueberries and don't forget that maple syrup.
Another classic American style pancake combination is bacon (streaky or otherwise) and maple syrup. If you haven't tried it before, we understand you might be slightly wary of bacon and syrup together but oh goodness, you NEED to try it! It will transform your life (maybe a bit dramatic)!
These pancakes are absolutely, INCREDIBLE, like what breakfast dreams are made of kind of incredible! They are so fluffy and light and are the perfect base for any of these divine combinations. And a super delicious way to start your pancake day, or any other day!
We love the idea of making these on a lazy Sunday morning, and we can't wait for the next time we get to make them.
Thank you so much for reading this post!
What kind of pancakes are your favourite, crêpes or American?
We would love to know your favourite toppings too, we're always taken in by the delightful, traditional lemon and sugar combo for a crêpe!
