COCKTAIL CUPCAKES | SANGRIA

Today marks the start of possibly the best blog post series you have ever seen… cocktail cupcakes! We’ve had this idea for a while so we are very excited for summer to finally start and the yummy baking to begin. Our first cupcake is the Sangria cupcake!
Whenever we go on a Spanish holiday, we drink jugs and jugs of sangria; it’s our perfect summer drink! So here is our favourite holiday drink transformed into a delicious cupcake featuring red wine buttercream! 



We used the idea and adjusted the recipe from here after searching for sangria inspired cupcakes and seeing the beautiful looking cupcakes on Pinterest!



Ingredients:

For the cakes...
4oz butter
4oz caster sugar
2 eggs
1 tsp vanilla
1 tsp baking powder
4oz self-raising flour
zest of 1 orange
handful of blueberries 
handful of chopped strawberries

For the red wine syrup...
approx. 2 cups of red wine
approx. 1/2 cup of caster sugar

For the buttercream...
4oz butter
10z icing sugar
red wine syrup
red food colouring

To decorate...
blueberries
strawberries
orange slices

Preheat your oven to 200°C/180°C Fan/Gas mark 6 and fill your cupcake tray with 12 cupcake cases.



Beat together the butter and sugar, then add in the eggs, vanilla and baking powder and combine. Next, fold in the self raising flour (leaving one tablespoon to the side for the next step) until you have a smooth batter. 
To prevent all your fruit from sinking, take the tablespoon of flour you put to the side and lightly coat your blueberries and chopped strawberries. Stir these into the batter along with the orange zest.



Now, take the batter and fill your cupcake cases, we managed to get 12 out of ours but you will get a different amount depending on the size of your cases! Place in the oven and bake for 20 minutes or until golden brown and an inserted skewer comes out clean.


Time for the amazing red wine syrup! 
In a saucepan over a medium heat, bring the red wine and sugar to the boil. Once it starts to boil, reduce the heat slightly making sure it’s still boiling a little without going crazy. Allow the wine to reduce and thicken for about 30 minutes. Ours reduced down to about a quarter of what we started with. Remove from the heat and leave to cool. Once it is at room temperature you can put it in the fridge to speed up the cooling process. The wine will continue to thicken as it cools. Don't worry too much about the measurements for this, you can just use any cup. As long as you get the right ratio of wine to sugar it will work out! 



To get the buttercream started, beat the butter until light and fluffy. Add in half of the syrup and the icing sugar and beat together. You can now add more of the syrup if you desire a stronger taste and add more icing sugar if you find the buttercream gets too runny. We ended up adding nearly all of our syrup because it’s just so yummy! We also added some red food colouring to balance out the darker colours from the wine syrup and get a nicer purple colour.


Take a piping bag with a star nozzle and spoon in your buttercream. Pipe the buttercream onto the cupcakes starting from the outside and swirling towards the centre. 


Decorate your cupcakes with your orange slices, blueberries and strawberries.


Finally, pour your friends and yourself a big glass of sangria and tuck into your delicious cakes!


These cupcakes are one of the most delicious things we have ever made and our friends and family agree! We will 100% be making these again!
They actually do taste like sangria and look so exciting and colourful.
The cupcakes have such a heavenly orange flavour, and the blueberries and strawberries give the cake an explosion of fruity flavours.
 The red wine syrup for the buttercream is so tasty, and I think we may end up making it to use on other things! It would be perfect to use to look like blood for a halloween bake!
